Recipe #01 - Enda (Egg) Bhuna

This one is a classic (aren't they all...?!). Really, this is a dish for anyday - whether it's because you don't have any fish, poultry, red meat at home, or you ran out of "mainstream" vegetables - so simply because you feel like having something quick, simple and delicious!

Main ingredients:
(note: I've never followed recipes by the book, and I can never tell people exactly how much to use in my own recipes - the trick is to "go with the flow", i.e. improvise - and the best results will always come with experience - trust me, I know. The following is only a guide).
  • 4 hard boiled eggs (usually should take 10-15 mins to boil & shelled) - of course, you can always add as many eggs as you want.
  • 1 large or 2 medium finely sliced onions (spanish or variant)
  • 1 or 2 tomato(es) - chopped
  • 1 or 2 clove(s) of garlic - chopped
  • 2-4 green chillies - chopped
  • pinch of fresh (if available) chopped coriander (danya) leaves
  • 1 teaspoon of sea salt (don't worry - table/rock will be fine)
  • 2 whole bay leaves
  • 2-3 whole cardomom pods (elachi)
  • 1.5 teaspoon of ground haldi (turmeric) powder
  • 0.5-1 teaspoon of ground chilli powder
  • 1 teaspoon of ground danya (coriander) powder
  • (Optional) five-spice/mixed garam masala - whole or ground, doesn't really matter
  • Vegetable oil - not sure how much, but keep it to down to about 2-4 tablespoons

Step-by-step:

  1. Heat the oil in a wok or frying pan and add the chopped garlic.
  2. Add the bay leaves, cardomom pods & if you have the whole garam masala - then add this in too.
  3. Just as the garlic is starting to brown (you don't have to wait) add the sliced onions and salt - stir and let the mixture caramelise.
  4. After a couple of minutes: Add the turmeric, and soon after add the tomatoes - mixed it all up
  5. After another couple of minutes: Add the ground coriander, stir and then add the chilli powder - cover the pan with a lid.
  6. Couple of minutes later: give the pan contents a good stir
  7. At this point, add the chopped tomatoes, stir gently and let it mix in with the rest of the ingredients
  8. After a couple of minutes, add the eggs - at this point I must digress a little: a neat technique you can try is have another frying pan on a separate hob with some oil gently heated. While you're doing steps 1-7, you can [golden] brown the eggs before adding them to the main frying pan with the spices. Anyway, back to the main point, once you've added the eggs, mix it up and cover the frying pan with a lid and keep the heat on medium.
  9. Keep checking the egg and giving the contents a stir every now and then making sure the eggs are turned so they don't burn.
  10. Finish off with sprinkling the chopped green chillies and chopped coriander leaves (if you have any) over the eggs and take it off the hob.
Enjoy with some simple boiled rice. Delicious anytime.
